How to make cheesy cauliflower bread

Super cheesy cauliflower bread, a really easy recipe that goes great with a light lunch or just as a snack to take to work!

Cauliflower has had something of a renaissance over the last five years. It’s gone from being a sad, old, boiled, veggie that kids hate, to a refined favourite of michelin starred restaurants. One of the most notable changes in cauliflower usage has been the rise of cauliflower rice. It has become a popular low-carb and gluten-free alternative to traditional rice. It’s also been used as a healthy replacement in traditional flour recipes.

I love roasted cauliflower, compared to bland, insipid, boiled, cauliflower - roasting gives this vegetable a deep nutty flavour that stands up really well to other ingredients. It transforms into the star of the show rather than something you just push around your plate.

This recipe can be found on realhousemoms.com and is a fun, easy way to get the family to eat vegetables. Great to accompany kebabs, roasted meats and tapas or mezze style meals, cheesy cauliflower bread can be eaten hot or cold (although it is best straight from the oven while the cheese still oozes).

Ingredients:

  • 1 x head of cauliflower - leaves and core removed

  • 1/2 x bag of grated mozzarella

  • 1/2 cup grated parmesan

  • 2 x eggs

  • 1/2 tbsp. chopped basil

  • 1/2 tbsp. chopped flat leaf parsley

  • salt and pepper to season.

Directions:

  1. Preheat the oven to 200 deg C and line a baking sheet with parchment paper.

  2. Rice the cauliflower in a blender but don't chop too much otherwise the texture will be too fine.

  3. In a large bowl mix the cauliflower, 1/2 the mozzarella and all the parmesan.  Add the herbs and season.  Mix lightly together and then add the egg.

  4. Mix until it holds together and becomes doughy.

  5. Spread the mixture onto the baking sheet into a rectangle.

  6. Place in the oven for 10-12 minutes

  7. Remove oven and add the remaining mozzarella to the top of the cauliflower. Make sure it is an even layer

  8. Place back into the oven for another 15 minutes until golden brown and melted.

  9. Try hard not to eat it all at once!

The cheesy riced bread laid out ready to go in the oven. Just needs part baking before the rest of the gooey, grated mozzarella gets spread on top - delicious!
